This snowy winter weather has me craving delicious, warm, and cozy food. This new year has me craving healthier habits, healthier meals, and easy clean-up. Well, this soup hits all the marks and gets extra points for also being elevated! Truth be told I love a good soup any time of the year- and this will quickly become one of your favorites too, I promise!
The inspiration for this recipe comes from a cookbook I purchased for myself while doing some online shopping during the holidays. This is the very first recipe I’ve made so far, thankfully I lucked out when I happened to have most of the ingredients for it.
The ingredients called for canna-butter (no worries, the book tells you how to make it), butter, onion, carrot, butternut squash (frozen is okay), chicken or veggie broth (I didn’t have any so I made my own with hot water and bouillon cubes), salt, pepper, and smoked almonds and avocado for garnish. Simple and delicious.
Cooking with Cannabis by Laurie Goldrich Wolf is loaded with cooking with cannabis basics, dosing, storing & freezing canna-products, decarboxylation, and recipes, along with step-by-step instructions on how to make your own canna-butter, canna-oil, canna-cream-cheese, canna-honey, and even canna-flour. This book is a great beginner guidebook, I wish I’d found it sooner!
I also appreciate that Cooking with Cannabis offers recipes for one, as well as entrees, soups, salads, sandwiches, appetizers, sweet treats, and breakfast recipes for entertaining or if meal prepping for yourself. I think that meal prepping medicated meals for ourselves is a great way for us to plan ahead, stay on medication schedule while also keeping those New Year’s resolutions of eating healthier more nourishing meals. Perhaps a fun cannabis-infused dinner party?
So I mostly followed the recipe for Simple Butternut Squash Soup on page 34, and I made it my own with some extra stuff and necessary substitutions- because I didn’t have all the ingredients on hand. Other stuff? A little Adobo and Sazon to Cuban it up! Also, I made a double batch and added the canna-butter at the end to just one of the servings. This allowed me to medicate my serving while leaving my meal companions unmedicated. Quicker clean-up too!
Most of the basics you’ll need to get started with any canna recipe you already have in your kitchen. But if you’re looking to make cooking with cannabis easier, then these will do the trick. Also, remember that this does only apply to THC same methods apply to CBD also.
Remember, I’m not here to promise that cannabis is a miracle cure, but I sure as hell am going to share the many wonderful qualities of it with you! It may or may not be right for you specifically, and that’s totally okay too. If you have questions though, ask them! I am here for you.
